Crispy Fried-Fish Tacos, Yummy

So my daughter decided she wanted some fish tacos the other day, while making the food menu. They turned out delicious, so good we are eating the left overs two days later. I used 2 pounds of Tilapia instead of 1 pound, and added an extra half cup of flour and 4 eggs instead of of 2. There was plenty of Panko crumbs.

I got the recipe from Food & Wine website, will have to check them out again for more recipes.

That night my daughter decided it was more fun to give the dog a grooming session than to make dinner. So I got to enjoy the task of cutting and breading each single slice of fish. Let me tell you that is thee most time consuming part of this whole meal.

Two days later I enjoyed some left overs of this fish with two corn tortillas stuffed with cheese and than the fish and some cabbage, DELICIOUS!

  1. 1/2 cup mayonnaise
  2. 1/4 cup hoisin sauce
  3. 2 tablespoons sweet pickle relish
  4. 1 1/2 teaspoons fresh lemon juice
  5. 1 cup all-purpose flour
  6. 1 teaspoon garlic powder
  7. 1 teaspoon onion powder
  8. 1 tablespoon kosher salt
  9. 1 teaspoon freshly ground white pepper
  10. 1 pound tilapia fillets, cut into 4-by-1-inch strips
  11. 2 large eggs, beaten
  12. 3 cups panko (Japanese bread crumbs)
  13. 3 cups vegetable oil, for frying
  14. 12 corn tortillas, warmed
  15. Shredded green cabbage, lettuce leaves, cilantro and sliced scallions, four servings
  1. In a bowl, whisk the mayonnaise with the hoisin sauce, pickle relish and lemon juice.
  2. In a large resealable plastic bag, combine the flour, garlic powder, onion powder, salt and white pepper. Seal the bag and shake. Add the fish and shake to coat.
  3. Put the eggs and panko in separate shallow bowls. Dip the fish in the egg and then in the panko. Transfer the fish to a wax paper–lined platter.
  4. In a large, deep skillet, heat the oil to 350°. Add half of the fish and fry over moderate heat, turning once, until golden, about 3 minutes. Drain the fish on a paper towel–lined platter. Repeat with the remaining fish. Serve the fish in the tortillas, passing the hoisin mayonnaise, cabbage, lettuce, cilantro and scallions for serving.

PB Cookie Recipe from an old dear friend

When I was younger I would stay at my grandmothers house and we would visit her friends. My favorite place to go was to her friend Ola and Texs' House. They had a nice big back yard that was full of plants and lovely things to look at. She always had goodies being made or sitting on the counter.
One of my favorite things that she made was these Peanut Butter Cookies. They were always moist and yummy.

Here is her recipe:

1 1/2C. PB (I use organic crunchy)
3/4 C. Butter
3/4 C. Shortening
3 3/4 C. Brown Sugar
3 Eggs
3 t. Vanilla
3 C. Whole Wheat Flour (I use white bleached, but this is what the recipe says)
3 t. Baking Powder
1 1/2 t. Salt
3 C. Rolled Oats

Mix all and bake at 350 degrees.

I have yet to make it with Whole Wheat Flour, and I use 1 1/2 cups butter instead of the shortening and it works fine.

Cream the Butter and Brown Sugar together. Add the Peanut Butter till it is creamed together with the Butter and Brown Sugar. Add the Eggs one by one until they are completely mixed in. Next add the Vanilla, Baking Powder and Salt. Finally add in the Flour one cup at a time. Now add the Rolled Oats.

Just keep your mixer going the whole time you are putting in the ingredients. It makes roughly 36 to 48 cookies. I just put them by spoonfuls onto the cookies sheet and push down lightly with my spoon (no forking these ones).

My new project!

Decided it was time to put up some pictures of my new project. This is the starting of my quilt. I cannot wait to see it finished!
It just feels right to work with this from the center out.

skin cancer

new reports out are showing that skin cancer rates keep rising, amid all of our slathering on of the chemical sun screen.
Does it really help?
Does it really even matter?

I haven't used sun screen often in my life. Often wonder if one day I will drop dead of melanoma or. . . will my friends who slather the white goo all over come down with it and wonder why.

pills, vaccines

i sit here and think every day of the things i could write, of the things that go through my mind and than out. the world is so aggravating. listening to how people expect doctors to make them all better with a special pill.
here take this magical pill and it will make you skinny, dont worry you dont have to work out you dont even have to change how you eat. really? are we all so stupid, well apparently most of the population must be because these pills have become such a hit. now i sit back and wait for people to get major side effects from these pills that were rushed to market because the populous wanted them. than we will turn around and sue the pharmaceutical company for making such a product. how could they make something we want and rush it to market with out looking into its side effects. but do we, personally each of us, think about it? no. we just pop the pill in our mouth and expect it to be what it is suppose to be.

i hear about these children who get these medicines and the parents complain about the side effects yet they give them to their children and dont question the doctor. really? are you that stupid!?! really? lets give this to my child, this little piece of me that grew in me (or my wife/girlfriend) and see if it effects them. i'm sorry, personally, i do not work this way. if i wouldn't put it in my body my children will not get it. stupid doctors. . . hell stupid parents for giving their children all of this junk to put in their little systems.

new vaccines are out for babies, and what is this vaccine? it is rotovirus. what does this do? oh it is a sickness that can give your child diarrhea, dehydrate them. OMG how scary is that. and so we let the doctor give this to our babies, and the side effects are worse, if not the same, as the sickness itself. WTF!! seriously are we that stupid that we just hand over our infant and go, yes please, yes give my child this vaccine even though if i watch my child and take care of them properly if they get this sickness it isn't that bad. only a few infants die yearly of the rotovirus and yet the pharmaceutical companies have deemed it necessary to make this vaccine and we hand over our infants, or babies, our innocent children and let them take this vaccine.

now dont think i am against vaccines because i am for them. i think there is a place for them but the rotovirus vaccine is a bunch of junk that the pharmaceutical companies decided they needed to make to take more money from us, or from our insurance companies.

than there is the gardasil vaccine. truly they rushed this sucker to market and there are little girls that will now never have a baby, never be able to enjoy the experience of being pregnant, or having their own baby in their arms. the side effects of this vaccine are nasty and yet the doctors push us to give it to our children, boys and girls!?!?!?! really? let me kill my child's hopes and dreams with one vaccine.

little girls want babies, most of them, and dream of having a family and how they would love their babies. and this vaccine takes that away from them. the effects have yet to be seen in little boys, but they are telling parents that both boys and girls needs this vaccine.

oh doctor, doctor make me all better. . . and in the dark shadows he/she makes you worse in the long run.

make your own decisions, dont listen to your doctor. look at your options and find out if what they are saying makes sense. are you sure this is for you. whats right for one person isn't always right for the next. . .infact i think all of our bodies are different, right? isnt that what we are taught when we are little, that everyone is different and that is what makes the world such an interesting place? and yet here are the doctors coming along and trying to tell us that what was right for the patient before us is right for us as well.

ramblings of thoughts

when i was little i dreamed of being a mama and all the fun i would have with my children. i knew i didnt want to raise them in the manner i was being raised in, but i did know that i would be strict. did not realize how hard it is to not be your parents child.
i am very glad for the role models i have, now that i am older. like to think that my children are growing up in a happier home than that of which i was raised.

that being said. . . i do not understand why so many parents do not go with their gut instincts on discipline. why do parents allow their children to get by with doing so many things that they know they should not be allowing! it doesnt just hurt your child as a child it hurts them as an adult because they have to relearn things they should have learned properly as a child.

i realize that parents believe they are raising children but really? you cannot teach them that this is wrong and that is right? there was something quoted to me with tiffany was younger and it has stuck with me all this time (all of six years or so, LOL) and that is, "we are raising adults, not children." now this can be taken many ways. the way in which i take it is that if we do not challenge our children and teach them the way of doing things correctly and that chores need to be done before play time (even though as adults we have issues doing this), than when will they learn this? When they are almost thirty and looking at their house going, man do i need to clean.

honestly it isn't o.c.d. kicking in, it is just the point at which you were taught as a child to clean. growing up i kept the house clean, dusted, vacuumed. out on my own i have found i dont like cleaning 24/7, didnt than and i dont now, so i let things go a bit (okay maybe more than a bit). eventually i start cleaning, but i would rather be outside in a garden or watching my children and/or husband play with toys. truth is everything else is more interesting than cleaning. even a little bug that is crawling under the magnifying glass.

seriously, how many of us really like telling our children, "leave me alone," "go away and find something else to do." think we would rather go and paint with them, or do clay models. my little artsy girl really has me going to my sewing machine.

speaking of my sewing machine, i took it apart last night and oiled it and put it back together. very proud of myself. why should i pay someone to fix my toy? honestly, what is between me and my machine besides. . . oh i dont know an internet filled with information of how to do this and that. thanx i'll keep my money and play with my machine till it is working. now to go sit infront of it and play with fabric.

catch ya later.

Well,. . where has the time gone!?!

One week of Tiffany's "vacation" is already gone.
Now her real spring break has started and the week is about half over! Little does she know that tomorrow we will be going to a little place in Apple Valley to do beading. I cannot wait to see her face when she see's it.
Kiran loves having her sister home all day. She wakes up and she is so happy. When Tiffany is sleeping in she looks up in her bunk try to see if she can wake her up, it is just to cute.
Tiffany's trip to Camp Ocean Pines went so well that she wants to go back. They are offering a summer time thing and she us to send her to that one. I am looking around to see if there are any good camps around us. I have heard there are a few in Big Bear, so we shall see if anything happens.
Kiran has started eating meat, the jar food, and seems to love it. Once it is heated and mixed with some type of vegetable she chows down like there is no tomorrow.

gone for the week

so tiffany is gone for the week, back on friday. very nervous about her trip, i know she will have fun but i just have that small inkling of a thought something bad will happen. gotta love that glass is half empty feeling.

when she comes home i know she will have lots of stories to tell about what she had done, and hopefully new friends made.

kiran seems to be fighting a cold and her poor nose is just running a mile a minute.

so much going on

The time is going by so fast. It feels like we were just talking to tiffany's teachers about the cambria trip (ocean pines) for her 5th grade field trip, and now on monday she will be leaving. she is excited as can be and we are going this weekend to buy her things for the trip. thank you to everyone who helped make this trip possible for her, as it wasn't just us that put in money for her trip.

kiran will be turning one soon. i cannot believe it has almost been a year since i had my baby. almost been a year since a wonderful baby shower my friends threw me and made so enjoyable by their presence. I miss my brother though, for sure. it was wonderful how he was willing to stay at the baby shower even though he really didn't want to be there.

i cannot wait to see him again. and bro if you are reading this, no your post yesterday about missing us didn't help. i miss you lots too and the time we spent together. but very glad that you stayed with us before you left on your life trip :-) and I know you are happy doing what you are doing, so that helps.

still not sure how i want to do kirans birthday. i know i will be throwing a party for her, but than for tiffany i think she will be having a slumber party this year.

been looking at old pictures i have and realizing that we need to go back on vacation. Been a while and I think we all need to get away as a family, hmm what to do, what to do. haha

Science Project Time

Well, it is that time of year again.
This year Tiffany decided to do her science project on crystals; and so we are making homemade salt and sugar crystals. We will see if they form differently put in different places of the house and outside. I am thinking some food coloring in them would be kind of cool.
Either way we have found out much interesting information. I did not know that the Egyptians and Myans used stones for healing purposes. . . of course, in all reality I never knew much about stones/crystals/quarts in the first place.

babies. . .

what do babies think about?
they see all these things they dont know and they lay there and "play" with it. you have to wonder how scarey it must be, to be so small and powerless in this big world. the only person you really know is your mama.
mike thinks this could be why we dont remember things from such a young age. i think this could be very true.
all the blood curdeling screams a baby makes, and why? because they have every reason to be scared. how are they to know that when their tummy hurts mama will feed them. how are they to know when their bottom is dirty it will be cleaned. repetition takes a while, and until then they dont know that you will take care of them.

cold weather and baking

the cold weather is upon us. all i want to do is pull out my mixer, bowls and baking pans. at the moment i have a hankering for sticky buns, rolled in pecans. turning the oven on, filling the home with inviting smells and a warmth that only an oven can make.
turning on the crock pot and slowly cooking some stew or roast, mmm. the winter months are full of warming food, both for your tummy and your heart.

here is to the next few months being long and cold so we keep our kitchens' hopping with warming foods!

the days go bye. . .

yes, i meant to put the word bye up there. all the days just seem to fly by. no matter what i do or how i try they cannot and will not come back to me. you can beg and plead with the universe to give you back just one day, but it will not happen.
today i am thankful for all i have, and all i have lost in my life. the reason i am thankful for the things i have lost is because with out losing them i would not know, or understand, all the things i do have. relationships come and go in your life, and sometimes, the best thing to do is just let it go . . .
that being said i can say i am very thankful this year for all my family and friends. all the ones i have are the ones i want. nothing in life is ever easy!
growing up i remember wishing my family would care for me, as i only had a mother and step father and no one else. than as i got older i realized that it was my mother and step father that kept out everyone else, cut that tie and haven't looked back. i love celebrating the holidays and this year will be a special one as it is Kiran's first Thanksgiving, and first Christmas! i love all these firsts, just as i did with Tiffany.
so here is to hoping that we all have a great holiday season, and maybe some firsts for the rest of ya :-) i will try and share :-P

life moves all to fast. . .

kiran is five months old now. she is trying so hard to sit up, and wants to eat. every time we go to eat she is there with her little mouth drooling over whatever is on our plate.
it is amazing to see her finding her place in the world. she looks around and tries to figure things out. for instance, she has a pink giraffe my great cousins sent her and if you turn this little metal nob it makes noise and the head moves around. well, kiran has figured out how to make it work. she will lay there and play with that little metal nob. she looks up at us as if to ask us to turn it on. it is awesome.
tiffany is trying to be a kid while trying to be an adult, and the two do not mix. she wants to be in adult conversations, but she is a kid. it is so hard to be the age she is at.
her soccer season is almost over and she will be in the play-off's this up coming sunday. so proud of her and all the effort she put in this season, compaired to last seasons.

women . . .

i have come to realize something in myself recently, something i am not happy about.
when doing things i bring attention to myself. have you ever noticed that you do this yourself?
normally mike will ask me what i have done during the day, and i tell him. he tells me what he has done, clients he has seen, ect. just a way to discuss the days events. but even when he doesnt ask i will tell him, i vacuumed, or i washed the windows (if he hadnt noticed). now why do i do this?
seriously, why do i need to let him know "hey buddy i kept the house clean." he knows, he can see it, and if he doesnt it doesnt matter. he does things i dont see, he doesnt bring attention to it. i realized this after seeing him work outside to take care of some gardening for me one weekend. he never said anything but i knew.

i have watched women talk to their significant others and realized it seems to be a theme among us, to tell our significant others of what we have done. but why?

monkey love

tiff decided to hand kiran her monkey today and i got some of the cutest pictures. this is just one of them.

kiran is growing like a weed. she is almost three months old and wearing 6 to 9 month clothes. there are so many cute clothes that she has. she is trying her hardest to crawl as well.

tiffany is in soccer right now. they have not started any games but will in september. her team meets three times a week an hour and a half each time. she is getting in shape :-)

we are about to move, beginning of september. wish us luck :-)

growing, growing, growing. . .

so all kiran seems to do is sleep. I know babies are suppose to eat, sleep, and poop but come on already! of course she is starting to turn around in circles on the floor. today she did half a circle and at the end of it all had a puppet zebra in her mouth for chewing purposes.

she loves sitting on the couch and just staring. of course, she only does this for about 5 to 10 minutes and than wants to be moved.

well maybe I'm glad she sleeps so much. . .

bath time

tonight I was watching kiran as tiffany hopped in the tub to play with her, and she smiled. after nights of knowing we had to have her bath ready by 8, as she would scream otherwise, it seems she has something else to look forward to. . . big sister playing with her!

it was so wonderful seeing her face light up as tiffany went to get in the tub next to her.

tiffany seems to look forward to their special time as well. she was drawing out in the dining room when I grabbed everything for bath time, and within a minute she was in the bathroom ready to jump in.

she loves seeing kirans face light up as she tries to grab the bath tub monkey, attaches to the side of the infant tub. she gives it to her and the first couple times she opened kirans hand and placed it in her hand. now kiran is grabbing it by herself, as well as other toys.

but to me the whole point of this is to just enjoy all these little moments. something I will never get back.

makes me look for more rewarding moments in every day. we all know they are they. just need to look harder for them.

art. . .

hundreds of years ago art was naked men and women protrayed in clay, rock, or stone. now art is considered photos painted or pictures taken.
little is shown to the people that still do art in rock or stone. . .
but what about the new art that no one really notices. . . the new artists every where. every website takes art to make it. who says art is just pictures you can wish to jump into, it can also be lines of code to make something work right or look good.

food for thought, this web page your viewing right now. . .is it just something to pass through, or did it take an artist of coding to make it work?

I think any person that makes a website is an artist, just some are good at what they do and the website will run smooth. . . or they don't know what they are doing and it will look ehh and run horribly.
