Crispy Fried-Fish Tacos, Yummy

So my daughter decided she wanted some fish tacos the other day, while making the food menu. They turned out delicious, so good we are eating the left overs two days later. I used 2 pounds of Tilapia instead of 1 pound, and added an extra half cup of flour and 4 eggs instead of of 2. There was plenty of Panko crumbs. 


I got the recipe from Food & Wine website, will have to check them out again for more recipes. 



That night my daughter decided it was more fun to give the dog a grooming session than to make dinner. So I got to enjoy the task of cutting and breading each single slice of fish. Let me tell you that is thee most time consuming part of this whole meal. 


Two days later I enjoyed some left overs of this fish with two corn tortillas stuffed with cheese and than the fish and some cabbage, DELICIOUS!





  1. 1/2 cup mayonnaise
  2. 1/4 cup hoisin sauce
  3. 2 tablespoons sweet pickle relish
  4. 1 1/2 teaspoons fresh lemon juice
  5. 1 cup all-purpose flour
  6. 1 teaspoon garlic powder
  7. 1 teaspoon onion powder
  8. 1 tablespoon kosher salt
  9. 1 teaspoon freshly ground white pepper
  10. 1 pound tilapia fillets, cut into 4-by-1-inch strips
  11. 2 large eggs, beaten
  12. 3 cups panko (Japanese bread crumbs)
  13. 3 cups vegetable oil, for frying
  14. 12 corn tortillas, warmed
  15. Shredded green cabbage, lettuce leaves, cilantro and sliced scallions, four servings
  1. In a bowl, whisk the mayonnaise with the hoisin sauce, pickle relish and lemon juice.
  2. In a large resealable plastic bag, combine the flour, garlic powder, onion powder, salt and white pepper. Seal the bag and shake. Add the fish and shake to coat.
  3. Put the eggs and panko in separate shallow bowls. Dip the fish in the egg and then in the panko. Transfer the fish to a wax paper–lined platter.
  4. In a large, deep skillet, heat the oil to 350°. Add half of the fish and fry over moderate heat, turning once, until golden, about 3 minutes. Drain the fish on a paper towel–lined platter. Repeat with the remaining fish. Serve the fish in the tortillas, passing the hoisin mayonnaise, cabbage, lettuce, cilantro and scallions for serving.

PB Cookie Recipe from an old dear friend

When I was younger I would stay at my grandmothers house and we would visit her friends. My favorite place to go was to her friend Ola and Texs' House. They had a nice big back yard that was full of plants and lovely things to look at. She always had goodies being made or sitting on the counter.
One of my favorite things that she made was these Peanut Butter Cookies. They were always moist and yummy.


Here is her recipe:

1 1/2C. PB (I use organic crunchy)
3/4 C. Butter
3/4 C. Shortening
3 3/4 C. Brown Sugar
3 Eggs
3 t. Vanilla
3 C. Whole Wheat Flour (I use white bleached, but this is what the recipe says)
3 t. Baking Powder
1 1/2 t. Salt
3 C. Rolled Oats

Mix all and bake at 350 degrees.

I have yet to make it with Whole Wheat Flour, and I use 1 1/2 cups butter instead of the shortening and it works fine.

Cream the Butter and Brown Sugar together. Add the Peanut Butter till it is creamed together with the Butter and Brown Sugar. Add the Eggs one by one until they are completely mixed in. Next add the Vanilla, Baking Powder and Salt. Finally add in the Flour one cup at a time. Now add the Rolled Oats.

Just keep your mixer going the whole time you are putting in the ingredients. It makes roughly 36 to 48 cookies. I just put them by spoonfuls onto the cookies sheet and push down lightly with my spoon (no forking these ones).

skin cancer

new reports out are showing that skin cancer rates keep rising, amid all of our slathering on of the chemical sun screen.
Does it really help?
Does it really even matter?

I haven't used sun screen often in my life. Often wonder if one day I will drop dead of melanoma or. . . will my friends who slather the white goo all over come down with it and wonder why.

pills, vaccines

i sit here and think every day of the things i could write, of the things that go through my mind and than out. the world is so aggravating. listening to how people expect doctors to make them all better with a special pill.
here take this magical pill and it will make you skinny, dont worry you dont have to work out you dont even have to change how you eat. really? are we all so stupid, well apparently most of the population must be because these pills have become such a hit. now i sit back and wait for people to get major side effects from these pills that were rushed to market because the populous wanted them. than we will turn around and sue the pharmaceutical company for making such a product. how could they make something we want and rush it to market with out looking into its side effects. but do we, personally each of us, think about it? no. we just pop the pill in our mouth and expect it to be what it is suppose to be.

i hear about these children who get these medicines and the parents complain about the side effects yet they give them to their children and dont question the doctor. really? are you that stupid!?! really? lets give this to my child, this little piece of me that grew in me (or my wife/girlfriend) and see if it effects them. i'm sorry, personally, i do not work this way. if i wouldn't put it in my body my children will not get it. stupid doctors. . . hell stupid parents for giving their children all of this junk to put in their little systems.

new vaccines are out for babies, and what is this vaccine? it is rotovirus. what does this do? oh it is a sickness that can give your child diarrhea, dehydrate them. OMG how scary is that. and so we let the doctor give this to our babies, and the side effects are worse, if not the same, as the sickness itself. WTF!! seriously are we that stupid that we just hand over our infant and go, yes please, yes give my child this vaccine even though if i watch my child and take care of them properly if they get this sickness it isn't that bad. only a few infants die yearly of the rotovirus and yet the pharmaceutical companies have deemed it necessary to make this vaccine and we hand over our infants, or babies, our innocent children and let them take this vaccine.

now dont think i am against vaccines because i am for them. i think there is a place for them but the rotovirus vaccine is a bunch of junk that the pharmaceutical companies decided they needed to make to take more money from us, or from our insurance companies.

than there is the gardasil vaccine. truly they rushed this sucker to market and there are little girls that will now never have a baby, never be able to enjoy the experience of being pregnant, or having their own baby in their arms. the side effects of this vaccine are nasty and yet the doctors push us to give it to our children, boys and girls!?!?!?! really? let me kill my child's hopes and dreams with one vaccine.

little girls want babies, most of them, and dream of having a family and how they would love their babies. and this vaccine takes that away from them. the effects have yet to be seen in little boys, but they are telling parents that both boys and girls needs this vaccine.

oh doctor, doctor make me all better. . . and in the dark shadows he/she makes you worse in the long run.

make your own decisions, dont listen to your doctor. look at your options and find out if what they are saying makes sense. are you sure this is for you. whats right for one person isn't always right for the next. . .infact i think all of our bodies are different, right? isnt that what we are taught when we are little, that everyone is different and that is what makes the world such an interesting place? and yet here are the doctors coming along and trying to tell us that what was right for the patient before us is right for us as well.

news is annoying me

another article on celebrities. really? is this needed. i honestly dont care that some victoria secret model had some photoshop on her arms and now looks like she is the incredible hulk.

i read the news for just that, news. and i am constantly being told about the royal couple getting married and how kristy alley this and that, honestly dont give to poos. and yet there it is. why cant the celebrity news be on one page and not on another. if i wanted to know id click onto the other page to view the articles.

ramblings of thoughts

when i was little i dreamed of being a mama and all the fun i would have with my children. i knew i didnt want to raise them in the manner i was being raised in, but i did know that i would be strict. did not realize how hard it is to not be your parents child.
i am very glad for the role models i have, now that i am older. like to think that my children are growing up in a happier home than that of which i was raised.

that being said. . . i do not understand why so many parents do not go with their gut instincts on discipline. why do parents allow their children to get by with doing so many things that they know they should not be allowing! it doesnt just hurt your child as a child it hurts them as an adult because they have to relearn things they should have learned properly as a child.

i realize that parents believe they are raising children but really? you cannot teach them that this is wrong and that is right? there was something quoted to me with tiffany was younger and it has stuck with me all this time (all of six years or so, LOL) and that is, "we are raising adults, not children." now this can be taken many ways. the way in which i take it is that if we do not challenge our children and teach them the way of doing things correctly and that chores need to be done before play time (even though as adults we have issues doing this), than when will they learn this? When they are almost thirty and looking at their house going, man do i need to clean.

honestly it isn't o.c.d. kicking in, it is just the point at which you were taught as a child to clean. growing up i kept the house clean, dusted, vacuumed. out on my own i have found i dont like cleaning 24/7, didnt than and i dont now, so i let things go a bit (okay maybe more than a bit). eventually i start cleaning, but i would rather be outside in a garden or watching my children and/or husband play with toys. truth is everything else is more interesting than cleaning. even a little bug that is crawling under the magnifying glass.

seriously, how many of us really like telling our children, "leave me alone," "go away and find something else to do." think we would rather go and paint with them, or do clay models. my little artsy girl really has me going to my sewing machine.

speaking of my sewing machine, i took it apart last night and oiled it and put it back together. very proud of myself. why should i pay someone to fix my toy? honestly, what is between me and my machine besides. . . oh i dont know an internet filled with information of how to do this and that. thanx i'll keep my money and play with my machine till it is working. now to go sit infront of it and play with fabric.
